Nourishing Winter Bowl Recipe




Enjoy this nourishing winter bowl recipe that combines seasonal flavors and wholesome ingredients:


Ingredients:


- 1 cup quinoa, rinsed

- 2 cups vegetable broth

- 1 tablespoon olive oil

- 1 onion, diced

- 2 cloves garlic, minced

- 1 sweet potato, peeled and diced

- 1 cup Brussels sprouts, halved

- 1 cup kale, chopped

- 1 teaspoon ground cumin

- 1 teaspoon smoked paprika

- Salt and pepper to taste

- Avocado slices for garnish

- Sesame seeds for garnish


Tahini Dressing:

- 3 tablespoons tahini

- 2 tablespoons lemon juice

- 1 tablespoon maple syrup

- 1 clove garlic, minced

- Salt and pepper to taste

- Water to thin, if needed


Directions:


1. Cook Quinoa:

- In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until quinoa is cooked and the liquid is absorbed.


2. Prepare Vegetables:

- In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent. Add minced garlic, sweet potato, Brussels sprouts, and kale. Cook for 10-15 minutes or until vegetables are tender.


3. Seasoning:

- Sprinkle ground cumin, smoked paprika, salt, and pepper over the vegetables. Stir well to coat evenly.


4. Make Tahini Dressing:

- In a small bowl, whisk together tahini, lemon juice, maple syrup, minced garlic, salt, and pepper. If the dressing is too thick, add water, one tablespoon at a time, until desired consistency is reached.


5. Assemble:

- Divide the cooked quinoa among serving bowls. Top with the seasoned vegetables. Drizzle with tahini dressing and garnish with avocado slices and sesame seeds.


6. Enjoy:

- Mix everything together and enjoy a nourishing winter bowl packed with flavor and nutrients.
