Ingredients:

- 4 large bell peppers, any color

- 1 pound ground turkey

- 1 cup cauliflower rice

- 1 small onion, diced

- 2 cloves garlic, minced

- 1 can (14.5 oz) diced tomatoes, drained

- 1 cup tomato sauce

- 1 teaspoon dried oregano

- 1 teaspoon dried basil -1 tablespoon chili powder -1/2 tablespoon cumin -1 cup chopped baby spinach

- Salt and pepper to taste

- Shredded cheese (optional, for topping)

- Chopped fresh parsley (for garnish) Notes: -Vegans and vegetarians use cooked lentils or beans instead of meat -No ground turkey: use ground chicken or beef -No slow cooker: bake peppers in the oven at 350° for 45 minutes to 1 hour

Directions:

1. Cut the tops off the bell peppers and remove the seeds and membranes. Rinse them under cold water and set aside.

2. In a skillet, cook the ground turkey over medium heat until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.

3. Add the diced onion and minced garlic to the skillet with the ground turkey. Cook for an additional 2-3 minutes until the onion is softened.

4. Stir in the drained diced tomatoes, tomato sauce, baby spinach, dried oregano, dried basil, chili powder, cumin, salt, and pepper. Let the mixture simmer for 5 minutes.

7. Place the stuffed peppers upright in the slow cooker.

8. Pour ½ cup of water into the bottom of the slow cooker.

9. Cover and cook on low heat for 6-8 hours or on high heat for 3-4 hours, or until the peppers are tender.

10. Optional: Sprinkle shredded cheese over the stuffed peppers during the last 30 minutes of cooking.

11. Serve the stuffed peppers hot, garnished with chopped fresh parsley if desired over prepared cauliflower rice, quinoa, rice, or sweet potato mash.
